I know its a while since the last post and all but I have this thing going in at work that kinda takes up all my time. Anyway here's a fail proof shortbread recipe for the coming holidays.
What you need:
1 cup butter at room temperature
60 gms/half a cup of sugar
A tspn vanilla extract
250 gm/approx 2 cups plain flour
Beat the butter till smooth. Add in the sugar, vanilla and flour to form a dough. Refrigerate for a few hours or overnight. Once its set, remove from fridge and leave it out for about 10 mins to get to room temperature. Flatten out to 1/4". Bake for 8-10 mins.
